We are seeking a skilled and passionate Head Chef & F&B Manager to lead the hospitality operation of a prestigious country estate in the KZN Midlands. This is a unique, hands-on role suited for a strong all-rounder who can comfortably manage both the kitchen and front-of-house operations across the different venues. The ideal candidate would be an organised, business-minded chef-manager who handles pressure calmly, manages numbers confidently, and blends exceptional country hospitality with warm and polished guest experiences.

Minimum Requirements

  • Recognized formal culinary arts or hospitality management qualification.
  • 5+ years of experience as a Head Chef, F&B Manager, or Executive Chef in a premium estate, lodge, or boutique hotel.
  • Strong understanding of everyday country-style menus, corporate golf days, and bespoke events.
  • Proven experience with menu costing, stock control, budgeting, and hitting GP targets.
  • Excellent communication skills with the confidence to interact directly with estate residents and corporate guests.
  • Willingness to live and work in a country estate environment in the KZN Midlands.

Key Duties & Responsibilities

  • Oversee the daily F&B and kitchen operations across the different departments/outlets.
  • Design seasonal farm-to-table menus and build strong relationships with local suppliers.
  • Manage kitchen financials, including detailed recipe costing, monthly stocktakes, and food costs.
  • Help plan and execute weddings, corporate conferences, and estate functions.
  • Interact with guests and estate homeowners to manage special requests and build a welcoming atmosphere.
  • Structure cost-effective staff rosters while training and mentoring both the kitchen and service teams.
  • Ensure strict adherence to health, safety, and hygiene standards across all F&B areas.
